Paleo Salad with Over Easy Eggs

For those of us who often find ourselves in a rush in the morning, the Paleo Salad with Over Easy Eggs can often be a savior when it comes to making a quick breakfast that is far from bland. This paleo food is a great source of much needed vegetables and proteins to kick start your day. If you have vegetables chopped, cleaned, and stored in the refrigerator already, it will take less than 10 minutes to put together. There are no ‘set ingredients’ with this recipe, so feel free to experiment with different vegetables.

Ingredients
  1. 4 tbs of coconut oil or grass fed beef
  2. 2 eggs
  3. Fresh Lettuce
  4. pepper
  5. onion
  6. carrot
  7. tomato
  8. celery
  9. avocado
  10. broccoli

Instructions
  1. Melt coconut oil or grass-fed butter over medium high heat in a small frying pan.
  2. Crack two eggs and cover. Prepare your salad on a plate.
  3. Combine fresh peppers, onion, carrots, tomato, celery, avocado, broccoli or any of your favorite vegetables. (This is where the recipe gets flexible, so try something new!)
  4. Cook the eggs until they are over easy (the juices from the egg run over the veggies, creating a delicious mixture; though feel free to cook the eggs however you like if you’d much prefer a different doneness).
  5. Season your fresh salad with some sea salt and pepper. Top it off with your eggs and enjoy. If you wish to spice things up then try a touch of olive oil or avocado.
