The ABA Salad

This quick salad is a wonderful combo of apples, beets and arugula, and tastes absolutely divine thanks to the sweet-n-salty dressing, which makes it a perfect addition to your side dish recipes.

You will need:

  • Beets
  • Apples
  • Baby arugula
  • Olive oil
  • Apple cider vinegar
  • Sea salt
  • Ground black pepper
  • Orange juice and zest
  • Raw honey

Directions: Bake the beets in an over for about 50 minutes- drizzle some olive oil over them before you do it. Remove, chop them into bite-sized chunks and set aside. Steam the apples, chop them and add them to the bowl along with the beets. Add the chopped arugula to these as well. In another bowl, create a simple dressing by mixing all the remaining ingredients and adding them to the veggies- a great addition to your side dishes for dinner or lunch!


Paleo Coleslaw

You will need:

  • Paleo mayonnaise
  • Green cabbage
  • Red cabbage
  • Carrots
  • Fresh parsley
  • Ground mustard
  • Honey

Directions: In a mixing bowl, combine apple cider vinegar, mayonnaise, mustard, honey and salt and pepper and set it aside. Chop the red cabbage, green cabbage, carrots and parsley and place them in a large bowl. Add the dressing over it and toss well- the perfect cold side dish! You can also create your own Paleo-approved mayonnaise yourself by combining a couple of egg yolks with some lemon juice, coconut oil, olive oil, salt, pepper and mustard and whisking it vigorously. Sweet Potato Fries

You will need:

  • Sweet potatoes
  • Garlic powder
  • Paprika
  • Arrowroot starch
  • Parsley
  • Coconut oil
  • Sea salt
  • Pepper

Directions: In a small mixing bowl, combine salt, pepper, arrowroot starch, garlic powder, paprika and chopped parsley. Cut the sweet potatoes into sticks and add the entire seasoning mix over them and coat them well.

Set all these potatoes over a baking sheet and drizzle with some coconut oil. Allow them to bake in a pre-heated oven for around 25 minutes or until they’re crisp- it is also a good idea to turn them around after a few minutes to ensure they are crisp from all sides- perfecto!
